We are an artisanal chocolate company that uses fresh, natural ingredients and the finest European chocolate to meticulously craft unique, flavorful chocolate confections.

We pride ourselves in our unique approach to making delectable chocolate confections. We stand out from our competitors by creating bold, expertly crafted flavor profiles; some nostalgic, others rarely incorporated into chocolate confections.    

At Glennmade Confections, we want you to feel euphoria. And we can achieve that through our chocolates. If you would try a bonbon, it would mean the world to us.

OUR TEAM

MEET GLENN S. PETRIELLO, OWNER AND CHIEF CHOCOLATE OFFICER

Glenn is currently a full time Human Resources professional in Lower Manhattan and has a huge passion for chocolate. He began creating chocolate confections in 2009 making truffles in his kitchen in the Bronx, NY before moving to Hoboken, NJ in 2010. In 2011, Glenn took several classes at the International Culinary Center(formerly known as the French Culinary Institute) which included: Chocolate Treats and Truffles, Chocolate Desserts and a special Master's class with Pastry Arts Dean and renowned chocolatier, Jacques Torres.

After taking these classes, Glenn felt inspired to share his passion. He felt compelled to take his craft to the next level. Glenn began to experiment with bonbon flavors and hone his skill by regularly making confections; sharing them with friends and donating them to charity events. Glenn then became more serious about creating a business with his confections and returned to the ICC to enroll in a Restaurant Management course in January 2013. Additionally, Glenn took two courses at Ecole Chocolat: Quality Assurance and Professional Chocolatier, with which he was awarded a Certificate of Achievement with Honors. As 2014 approached, Glenn decided to take the next step and incorporate. From February to June 2014, he was making and selling his dark chocolate bonbons at Tuck'd Away Bar and Grill in Tuckahoe, NY. Since then, Glenn has been focusing on spreading his brand and his dark chocolate confections by taking part in events across New York City, Westchester County, and in Hoboken, NJ.

Dark Chocolate Bonbon

Flavor Guide

Our meticulously crafted dark chocolate bonbons are best enjoyed within 2-3 weeks and should be kept in a cool place with a temperature range between 55 and 65 degrees. 

BASIL AND OLIVE OIL

A dark chocolate ganache infused with basil and olive oil encased in a dark chocolate shell. 

Ingredients: Dark Chocolate, Heavy Cream, Basil, Extra Virgin Olive Oil, Fleur de Sel, Butter

CANNOLI

A Glennmade version of cannoli cream made with fresh ricotta cheese, tahitian vanilla bean and a hint of a special ingredient, cinnamon, inspired by Glenn's grandmother's recipe, encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Heavy Cream, Ricotta Cheese, Tahitian Vanilla Bean, Ceylon Cinnamon, Fleur de Sel, Butter

DARK CHOCOLATE PEANUT BUTTER AND JELLY

A fresh raspberry puree layered on top of a dark chocolate ganache with dark chocolate peanut butter encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Heavy Cream, Dark Chocolate Peanut Butter, Fleur de Sel, Butter

ESPRESSO

A dark chocolate ganache infused with espresso beans and freshly brewed espresso encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Heavy Cream, Espresso, Fluer de Sel, Butter

HONEY CINNAMON

A dark chocolate ganache infused with raw honey and organic ceylon cinnamon encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Heavy Cream, Raw Honey, Organic Ceylon Cinnamon, Fluer de Sel, Butter

LIMONCELLO

A dark chocolate ganache infused with Glennmade Limoncello, which was made from authentic Sorrento lemons grown and picked from an organic, family-run farm in San Diego, California and lemon zest. 

Ingredients: Dark Chocolate, Heavy Cream, Glennmade Limoncello, Lemon Zest, Fluer de Sel, Butter

NY STYLE CHEESECAKE

A fresh raspberry puree layered on top of a NY style cheesecake filling with an infusion of lemon and orange zest encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Heavy Cream, Organic Cream Cheese, Lemon Zest, Orange Zest, Fluer de Sel, Butter

PEPPERMINT

A dark chocolate ganache infused with organic peppermint leaves encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Heavy Cream, Organic Peppermint Leaves, Fluer de Sel, Butter

PUMPKIN PIE

A white chocolate ganache infused with pumpkin, freshly ground cinnamon, clove, ginger and nutmeg encased in a dark chocolate shell. (Seasonal)

Ingredients: White Chocolate, Dark Chocolate, Pumpkin, Heavy Cream, Granulated Sugar, Ground Ceylon Cinnamon, Ground Ginger, Ground Cloves, Ground Nutmeg, Fluer de Sel, Butter

SRIRACHA

A dark chocolate ganache infused with sriracha complemented with sweetened condensed milk encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Sriracha, Sweetened Condensed Milk, Fleur de Sel, Butter

TAHITIAN VANILLA

A dark chocolate ganache infused with tahitian vanilla beans, bay leaves and brown butter encased in a dark chocolate shell.

Ingredients: Dark Chocolate, Tahitian Vanilla Bean, Bay Leave, Butter, Fleur de Sel

VULCAN FIRE SEA SALTED CARAMEL

A luscious caramel spiced up with a touch of Vulcan's Fire Salt and a hint of sea salt encased in a dark chocolate shell. 

Ingredients: Dark Chocolate, Granulated Sugar, Vulcan Fire Salt, Sea Salt, Butter

ROCK AND RAWHIDE - 2ND ANNUAL BLACK, RED AND WHITE GALA - OCTOBER 28, 2014

On October 28th, we had the honor and privilege to sponsor the Karma Bar at the Rock and Rawhide 2nd Annual Black, Red & White Gala at the iHeart Radio Theater in NYC. We put together 80 4-piece boxes of our dark chocolate bonbons (Flavors included: Dark Chocolate Peanut Butter & Jelly, Limoncello, Espresso & Pumpkin Pie). In addition, we had a three-tiered display of our pumpkin pie bonbons which were a crowd pleaser including several of the notable VIP guests including Coco, Skeery Jones from Z100 Morning Show & Joe Gallo from Impractical Jokers. Rock & Rawhide's mission is to support shelter animals and provide toys and treats etc to them to help relieve stress while in shelters and make them more adoptable. Both of the co-founders, Kylie and Sean-Patrick are absolutely amazing people who have really huge hearts and I encourage you to support them in any way possible!

BRIELLE - "AVALANCHE" MUSIC VIDEO PRIVATE RELEASE PARTY - NOVEMBER 6, 2014

On November 6th, we had the honor and privilege to sponsor an up and coming pop artist, Brielle as she released her music video for her debut single, "Avalanche" at Bang & Olufsen in NYC. We had the change to mingle with some of her family, closest friends and other members of "Team Brielle" including X, Y, Z. For the event, we created 50 4-piece boxes of our dark chocolate bonbons (Flavors included: Dark Chocolate Peanut Butter & Jelly, Espresso, Limoncello and Pumpkin Pie) for everyone's gift bag and even put together a festive, fall colored display of those same four bonbon flavors. During the night we connected with various other sponsors including Kay Martin from Cupcake Kay's and Joseph Barsella from Bonfun Spirits who also pleased the crowd with pop-star royalty quality cupcakes and unique, wine-infused cognac made from the lightly fermented juice of pressed grapes blended with cognac, respectfully. As for our friend Brielle, she has started to get her name and her debut single, "Avalanche" out there and is on the path for a successful career is turning heads in the music world. INTERNATIONAL STOUT DAY 2014 - BONBON & STOUT PAIRING AT BROKEN BOW BREWERY IN TUCKAHOE, NY - NOVEMBER 8, 2014

On November 8th, we had the opportunity to work with the amazing folks at Broken Bow Brewery in Tuckahoe, NY to put together a bonbon and stout beer pairing. All guests who attended were able to purchase a 4-piece box of bonbons and a flight of 4 stout beers. Guests had the opportunity to choose from 8 various flavor bonbons!

BRONX WANDERERS: BACK TO THE MOUNT - CONCERT AT MOUNT SAINT MICHAEL ACADEMY IN THE BRONX, NY - NOVEMBER 21, 2014

On November 21st, we had the opportunity to sell our dark chocolate bonbons at Mount Saint Michael Academy in The Bronx, NY for The Bronx Wanderers Back to the Mount concert! All guests who attended enjoyed the talented music of The Bronx Wanderers as well as the opportunity to sit back and relax and even enjoy a few of our 8 bonbon flavors.
